Not Just Greens is one of the five new concepts that opened this academic year, offering students healthy and customizable lunch options. You can either order one of the seven salads on the pre-made menu as a salad or pita, or you can create your own with a plethora of options at your disposal. When customizing your salad, you have the option for the type of greens, four free toppings, cheese, dried fruits, nuts, and grains, as well as add-ins like grilled chicken or tofu. Top it off with one of the eleven dressings of your choice and you’re set for a healthy lunch.
With so much freedom, Not Just Greens is a great option for vegans and vegetarians on campus. There is even a vegan pre-made salad, Vegan Powerhouse, featuring broccoli, edamame, carrots, sunflower seeds, walnuts, craisins, apples, spinach, and romaine lettuce.
I went to Not Just Greens to try one of the pre-made salads off their menu for myself. The friendly woman at the counter made me a Classic Cobb salad, which has a generous helping of grilled chicken, apples, walnuts, beets, romaine lettuce, spinach, and usually goat cheese, though I opted for feta. I topped it off with balsamic vinaigrette dressing. I honestly didn’t think I’d like apples in a salad, but they were a surprisingly good fit with the rest of the flavours–a little crunchy sweetness in the mix. Next I’m planning on getting the Greek Cobb salad, because apparently I’m all about that cobb.
While I think the customizable salads are a fantastic idea, I’m pretty clueless in the kitchen, and whenever I try to cook without a recipe…it doesn’t turn out quite as I expected. I’d probably put together the worst ingredients in my salad, so for now I’m going to stick to pre-made. If you possess good kitchen-sense (unlike me), you’ll find the create-your-own options to be pretty great. They have tons of little containers right there with all the ingredients, and make it right in front of your as per your instructions. If you’re vegan, creating your own gives you many more options than you might find at other locations, and you can change it up rather than always getting the Vegan Powerhouse salad.
Not Just Greens isn’t the only place to get your vegan or veggie fix though–there are tons of other vendors around campus with plenty suitable options!
