Easy Chicken Stir-Fry

1In a large oil, heat up the oil.
2Saute the chicken until fully cooked, 4 minutes of each side.
3Remove from the pan and set aside.
4In the same pan, heat another 1/2 tablespoon of oil.
5Saute the onions, broccoli, carrot and mushrooms until slightly tender
6Add in the garlic and saute for 1 minute.
7Stir in the peanut butter, soy sauce, sriracha, fish sauce, sesame oil, red pepper flakes and sesame seeds. Bring to a low simmer and cook for 2 minutes.
8Slice cooked chicken and add back into the pan. Toss to coat.
9Cook until chicken is warmed through, another 2 minutes.
10Serve with extra sesame seeds.
1 tbsp extra virgin olive oil, divided
3 lean chicken breasts
1/2 onion, sliced
2 cups broccoli
1 cup carrots, julienne
1 cup mushrooms, sliced
2 cloves garlic, minced
1/2 tbsp peanut butter
1 tbsp soy sauce
1/2 tsp sriracha
1/4 tsp sesame oil
1/8 tsp red pepper flakes
1/8 tsp sesame seeds
Couple dashes of fish sauce
