Chef Colin wants people to see food as he sees it, and as not just a job. He says food is something that evolves on a regular basis, and is something that also gets more exciting the more you put into it.

“Food needs you always to push yourself a little more, and then seeing is believing,” he adds.

For now, Chef Colin is happy creating dishes, and cooking for our campus community. In the future, he has dreams of owning a restaurant on the beach, definitely a seafood restaurant, and maybe in Negril, where he would serve fresh fish with a European influence. Fresh seafood is his favourite food.

Chef Colin focuses a lot of his energy on maintaining standards. He says that one needs to have strong principles and always maintain standards.

“You have to always do the right thing and do your best to make people happy with food and everything else,” he adds.
