Breakfast Sandwich

A super-simple and quick to make breakfast sandwich that your tastebuds will simply adore. Baguette, cheese omelette, and then topped with cherry tomatoes and fresh basil leaves.

1Crack eggs and mix into a bowl.

2Slice bagels in half like a sandwich.

3With no oil in the pan, turn heat to medium and toast the inside of the bagel until toasted and brown.

4Remove from the pan. Keep the pan on medium heat.

5Add bacon slices and cook until crispy.

6Add olive oil in the pan and put the eggs in. Move those eggs gently but keep it flat on the pan for roughly 1 minute.

7Spread the cheese evenly on eggs and then turn the heat off after another 30 seconds.

8Use a spatula and gently fold omelette into thirds.

9Halve the cherry tomatoes and assemble sandwiches.

10Omelette at the bottom, then bacon, basil then top off with tomatoes.


3 eggs

1 wholewheat bagel

2 slices bacon

Olive oil

Aged cheddar cheese, to taste

6 - 8 cherry tomatoes

5 - 6 basil leaves
