1Brown the chicken thighs and sausage in a large pot. remove from the pot and let cool.
2Add oil to the pot, and whisk in the flour, constantly stirring until the flour is dark brown.
3Add the onions, bell pepper, and celery, and cook until the onions are transparent.
4Fill the pot halfway with water, and bring to a simmer.
5De-bone the chicken, and add the chicken and sausage to the pot.
6Add the garlic, salt, and cayenne.
7Let simmer for 1 hour .
8Skim the fat from the surface with a large spoon.
9Serve over hot rice, sprinkle with green onions, parsley, and enjoy.

1 1/2 lbs smoked sausage
1 cup vegetable oil
1 cup all-purpose flour
1 large onion, chopped
1 bell pepper, chopped
2 stalks celery, chopped
6 gloves garlic, minced
Green onion, chopped
