Easy Eggs Benedict

Eggs Benedict

1Boil a deep pan of water, and add a tablespoon of vinegar to the water once boiling.

2Preheat the oven to broil.

3Lightly butter the English muffins.

4Spread the English muffins and peameal bacon on a baking sheet.

5Broil for a few minutes, on the middle rack of the oven so the bacon does not dry out.

6While broiling, poach your eggs. Carefully drop your eggs into the boiling water, and cook for 3 minutes.

7Remove the baking sheet from the oven.

Hollandaise Sauce

1In a blender, pour the egg yolks, lemon juice, hot sauce, and salt.

2Blend for 30 seconds and set aside.

3Melt your butter.

4Start your blender, and slowly pour the melted butter through the hole in the lid of the blender.

Finishing touches

1To finish, place one piece of bacon on each English muffin.

2With a slotted spoon, remove each egg from the water and place on top of the bacon.

3Ensure your hollandaise sauce is hot and pour over the eggs.

4Garnish with black pepper and enjoy!

4 eggs

1 tbsp vinegar

2 English muffins

4 pieces of peameal bacon

Hollandaise Sauce

3 egg yolks

1/8 tsp salt

2 tbsp lemon juice

1/2 cup margarine or butter

1/4 - 1/2 tsp hot sauce
