1Heat a large skillet over medium heat; add the oil and coat the pan.

2Cook the eggs-sunny side-up for two minutes, cover and continue to cook until done.

3Spread the mashed avocado evenly over each toast slice. Add the alfalfa sprouts over the mashed avocado.

4Top each piece of toast with a fried egg, sprinkling the eggs with salt and black pepper.

5Finish with 2 tablespoons of salsa over each piece of toast.


1 tsp olive oil

4 eggs

1 ripe avocado, peeled and mashed

4 slices whole-grain bread, toasted

1 cup alfalfa sprouts

1/4 tsp kosher salt

1/4 tsp black pepper

1/2 cup salsa
