Pasta with Charred Zucchini in Basil Tomato Sauce

A pasta dish filled with delicious zucchini is livened up with clams and a generous helping of basil.

1Cook pasta al dente and keep hot.

2Heat the oil in a cast iron pan, and char the sliced zucchini al dente. Set aside.

3Meanwhile caramelize the onions and add the chopped garlic, cook for additional few minutes.

4Add clams and tomato sauce, bring to a boil and simmer for about 5 minutes. Add the chiffonade basil.

5Finally toss together the hot cooked penne pasta and charred zucchini.

6Garnish with chopped parsley


2 cups penne pasta, cooked

2 tbsp canola oil

1 cup zucchini, core removed and diagonally sliced

1/3 cup onions, chopped

3/4 tbsp garlic, chopped

1 cup clams, canned

2 1/2 cups tomato sauce

1 tbsp basil leaves, chiffonade

1 tbsp parsley, chopped
