This perfect spaghetti bolognese recipe is exactly what you need. No matter what the weather, the beautiful blend of veggies, meat and red wine will tantalize your tastebuds.

1Dice the carrots, celery and onions.
2Melt butter in pot at medium-high heat for 30 seconds.
3Put veggies in pot and stir occasionally with the butter for 6 minutes. Keep the pot at medium-high.
4Add the meat and break it up quickly with the spatula, for 3 minutes or until brown.
5Add milk and turn down the heat to medium heat and lower the heat again to low once the mixture goes to a simmer. Stir it every so often. Simmer until liquid evaporates completely, 15 minutes or more.
6Add the vinegar, turn up the heat to medium until mixture simmers and then bring the heat back down to low. This step could take 20 minutes plus, until wine vinegar is basically evaporated.
7Add the tomatoes and simmer. Simmer for up to 30 minutes until sauce is thick enough based on personal preference.
8Boil water (add a pinch of salt) and cook pasta for roughly 10 minutes.
9Once pasta is cooked, drain and serve with sauce.
10Top with grated Parmesan cheese.
